Green Dip with Peas, Fresh Herbs, and Za’atar

Description

The unsung hero of my freezer is a bag of frozen peas. I always have them ready to toss into stews, salads, and stir fries, you name it. Today we’re highlighting them in a spread that is a fun way to switch up your dip game. Step aside, hummus! The combination of the fresh herbs, bright lemon, sweet peas, and za’atar spice is refreshing, ultra satisfying, and delicious. If you aren’t familiar with it, za’atar is a super tasty blend of herbs and spices like sumac, oregano, cumin, coriander, and sesame seeds. It adds a lovely earthiness to the dish and I don’t recommend skipping it.

I love this dip for many reasons but I’m especially excited to give the humble pea its moment to shine!  If you’re entertaining, this dip is also wonderful to spread on crostinis for a fun hand-held bite. Enjoy!


Ingredients

Scale
  • 3 1/2 cups frozen peas, thawed
  • 3 tbsp tahini
  • 1/2 cup flat-leaf parsley (thin delicate stems and leaves), packed and roughly chopped (from 1/2 bunch)
  • 1/2 cup dill, packed and roughly chopped (from 1/2 bunch)
  • 1/4 cup mint leaves, roughly chopped
  • 2 tbsp za’atar spice, divided
  • 3 tbsp lemon juice, divided (from about 2 lemons) + 1 tsp lemon zest
  • 2 tbsp extra virgin olive oil, + more for drizzling
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/3 cup scallions, thinly sliced (from 3 scallions)
  • Bread or crackers for serving

Instructions

  1. Set aside ¼ cup of the peas. You will use them later as a topping. 
  2. Place remaining 3 ¼ cups peas, tahini, parsley, dill, mint, 1 tbsp za’atar, 2 tbsp lemon juice, 1 tsp lemon zest, olive oil, salt, and pepper in a food processor fitted with the steel blade. Process until you have a mostly smooth spread. Taste and adjust by adding the remaining 1 tbsp lemon juice if needed, and more salt and pepper to taste. 
  3. Spread out on a serving dish and drizzle in a little olive oil, sprinkling remaining 1 tbsp za’atar, the remaining ¼ cup peas, and sliced scallions on top. Serve with a side of crusty bread or crackers for dipping.
